Blueberry + Spinach + Cacao Smoothie
Please forgive me for the long delay since the last post! Between being pregnant and working out of someone else's kitchen while our home is being built, I've struggled to find the time and resources to share. But the good news is, our little house is coming along and I should be in our new space before too long. And with a new kitchen, I will have lots to share.
Every single morning since I've been pregnant I have woken up craving smoothies. I switch up which ingredients I use for the sake of variety, but this is my go-to smoothie of choice. It is thick and creamy enough to keep me full, but fruity enough to quench my thirst. This smoothie is a great source of healthy fats and antioxidants. And somehow the baby never seems to get sick of it.
Ingredients:
1 banana
1/2 cup frozen blueberries (I use organic wild blueberries)
1 handful of spinach
1/2 avocado
1 tbsp almond butter
1-2 dates
2 tbsp shredded coconut
3 tbsp hemp hearts
1 tbsp chia seeds
1 tbsp raw cacao powder
2 tbsp cacao nibs
3/4 cup milk (I like dairy milk for this - especially for the protein - but any milk will work. Hemp milk or sesame milk are especially great)
4 ice cubes
Place all ingredients in high speed blender and mix until smooth. Drink it or serve in a bowl with toppings. Some of my favorite toppings are: bee pollen, shredded coconut, cacao nibs, nuts, fruit, microgreens, or edible flowers.
