Chai Spice Creamy Freezer Cake

This is the perfect dessert to bring to your holiday dinner! With mostly raw ingredients and no refined sugar, this healthy treat is so easy to make. Read more to find the recipe and for a giveaway!

Ingredients:

4 cups cashews, soaked overnight

1/3 cup honey

1/3 cup Dona Chai (or another chai concentrate*)

pinch of salt

1/2 vanilla bean scraped

juice of half a lemon

1/8 tsp cinnamon

1/16 tsp nutmeg

*If you can't find a high quality chai concentrate, double the quantity of spices in the recipe and add 1/16 tsp ground ginger, 1/16 tsp ground cloves, and 1/16 tsp ground cardamom and increase honey to 1/2 cup.

Place all ingredients in a high speed blender or food processor and mix until smooth, scraping down the sides of the container as needed. I like to blend for nearly five minutes to get a really creamy texture. Pour into an 8 inch cake pan and freeze overnight. Remove from freezer 30 minutes before serving.
